Compassionate Cuisine WorkshopsHone your cooking prowess during Compassionate Cuisine's first season! We're pleased to offer the following single-day courses. Cooking classes are open to all active members of the CAS Community: Members, Volunteers, Animal Sponsors, and all other donors who have made a contribution within the last 12 months. Each class is limited to 8 people, so register early.

5 Easy Main CoursesIn this class, you will learn hearty main course items which are not only satisfying, but easy to make! Lasagna, Portabella alla Puttanesca, Grilled and Glazed Tofu, Stuffed Peppers, and Root Vegetable Turnovers with Mushroom Gravy. Along the way, we will discuss options for each dish, and learn components that can be used in other dishes. We'll finish class with a very satisfying meal on the CAS grounds. Price: $60 10am - 4pm |

| Tempeh, Tofu, and SeitanWe will explore just a few of the many ways in which these plant-based proteins can be used. We'll cover a variety of cooking methods, marinades, forms, and sauces. | Soups and StewsThere really are no limits in making soups and stews. In fact, you might find that your creativity is sparked even more by making solely plant-based soups. | Indian DinnerIn this special class, we will work together to produce a complete meal, which we'll then enjoy as a picnic on the farm. Samosas, chutney, curry, pilaf, and raita are included on the menu. We'll also make a few basic spice blends, only skimming the surface of this great world cuisine. Price: $40 1pm- 4pm |

| Italian DinnerFew ethnic cuisines lend themselves so easily to vegan dining. In this class, we'll make Caesar Salad, Minestrone, Lasagna, Gnocchi, along with some versatile sauces. We'll share all this great food during a picnic at the end of class, on the Sanctuary grounds. Price: $40 1pm - 4pm |

| Raw FoodsFar more than simple salads, Raw Foods encompass a wide variety of gourmet items. Main courses, desserts, sauces, cheeses, soups raw foods can provide intense pleasure at any point in a meal. We'll discuss the ingredients used in raw food preparation, as well as the methods and tools. Sprouting and other home-based food culturing will be demonstrated. Menu is forthcoming!
