Compassionate Cuisine

Catskill Animal Sanctuary has rescued nearly 2,000 desperately needy animals since its founding in 2001. As fulfilling as it is to offer a safe haven, we know that the larger impact comes from helping humans understand that a plant-based diet is not only kinder to the animals and the planet, but also healthier for us. To that end, we are pleased to be the only farm animal sanctuary in the country to offer a vegan teaching program.

What does that mean?

It means that we are taking positive, progressive action in order to make a peaceable and sustainable world a reality. People often say, "I'd stop eating animals if I knew what else to eat!" Addressing this problem is what Compassionate Cuisine is all about. With on-site cooking and organic gardening classes, appearances at farmers markets and food festivals, a blog with recipes, and more to come, we are providing the skills and knowledge of vegan eating to anyone interested in exploring it. Once people taste this food, so full of flavor and life, they realize just how delicious and easy it can be to make the switch. Chef Kevin Archer came to CAS from Santa Fe, where he was the chef at Tree House, the city's leading vegetarian cafe. His commitment to a plant-based diet reaches through California - he cooked at Ravens' Restaurant in Mendocino, and taught at Living Light Culinary Arts Institute in Ft. Bragg-and Colorado. In Denver, Chef Kevin was on the staff of the influential WaterCourse Foods restaurant and operated his own cafe. He received his training in Boulder, at the School of Natural Cookery. His love of plant-based eating also reaches to the soil, as he leads the garden project at CAS. Applying organic, biointensive methods to our onsite gardens, he demonstrates that one's dinner is part of an ongoing nurturing cycle. An added bonus? Kevin is not only a master chef, but also a warm and engaging teacher: you'll have fun as you hone your skills!
