For most of her life, Helen had never seen the sky, the grass beneath her, or the humans who love her. Blind since birth, Helen has one eye rotated into the back of her head and a severe cataract in the other, congenital conditions common in Hereford cows. She leads a happy and peaceful life with Catskill Animal Sanctuary's main cow herd, after being rescued from a beef production operation. Recently, Animal Care Director Abbie Rogers noticed that Helen pulled away when she approached with eye medication, but thought nothing of it until the ophthalmologist recently visited. The vet discovered that the cataract in one eye has started disintegrating thereby restoring some of Helen's peripheral vision! Think "Vegan Iron Chef" Veggie Conquest is a popular cooking competition where amateur chefs flex their culinary muscle and create edible masterpieces containing a secret ingredient revealed just days before the event. CAS chef Kevin Archer will be part of the three-judge panel (consisting of professional chefs and foodies) who, along with "tasters" (you!), will choose the winning dish. After the nibbling is done, everyone will enjoy a bunch of main courses, one of which will be lovingly prepared by Kevin!
